BBQ Chicken & Black Bean Tostada
My Brother's Black Bean and Corn Salsa brings a bright tangy flavor to this BBQ chicken and the cabbage adds a nice crunch!
6 tostada shells (corn)
red cabbage, julienned
rotisserie barbecue chicken or leftover grilled barbecue chicken, sliced
1 cup My Brother's Black Bean & Corn Salsa
sour cream & scallions, as garnish
Remove skin from rotisserie chicken and pull the meat, being careful to remove all bones. (one rotisserie chicken should yield about 3 cups of meat).
To assemble tostada - layer red cabbage, 1/2 cup BBQ chicken, 2 tablespoons My Brother's Black Bean & Corn Salsa, and sour cream. Garnish with scallions.
