Chicken & Sausage Gumbo
A bright, flavorful gumbo made with our House or Farm Stand Salsa. Serve with rice and hot crusty bread. A satisfying dish not just for Mardi Gras!
4 Tbls. Olive oil
½ cup onion, diced
½ cup celery, chopped
1 tsp. garlic, minced
1 ½ cups chicken, cooked & shredded
½ lb. smoked sausage, sliced
3 cups chicken broth
1 cup My Brother’s House or Farm Stand Salsa
1 cup frozen okra
1 15oz. can tomato, petite dice
1 tsp. salt
2 tsp. Cajun seasoning
In large dutch oven, sauté onion, celery, garlic, chicken. Stirring often, cook for about 30 min. when mixture starts to darken in color. Add sausage, chicken broth,
My Brother’s House or Farm Stand Salsa, okra, tomato, salt, Cajun seasoning. Simmer for 1 hour. Taste and adjust seasoning. Garnish with chopped scallions.
