Street Corn Avocado Salad
Our smoky, citrusy crisp street corn salsa piled high on a salted avocado half. Rest this goodness on a bed of peppery arugula, garnish with diced tomato, cotija cheese and you’ve just created serious magic! And it’s oh so beautiful to look at, too!

sea salt
Avocado halves, salted
My Brother’s Street Corn Salsa
tomato, seeded, diced
cotija cheese, or crumbly goat cheese
Toss arugula in a splash of olive oil, sprinkle with sea salt. Slice avocado in half, remove pit. Place on bed of prepared arugula, sprinkle with salt, spoon generous amount of My Brother’s Street Corn Salsa onto avocado half. Garnish with diced tomato and cheese. Oh my gosh…hold on to your tastebuds!
