Creamy Potato Salad
My dad made the best potato salad, ever! This is my salsa-fied version of what I grew up eating at almost every summer gathering! The creamiest potato salad recipe with just a slight tangy bite. Delicious to the last spoonful!
serves 6-8
Ingredients
4 cups (approx. 2 pounds) small red potatoes, scrubbed and cut into bite size chunks
salt and pepper
1/2 cup dill pickle, diced
1/3-1/2 cup of My Brother's Salsa Sauce
chopped red onion/chives for garnish
My Brother's Salsa Sauce:
1 cup mayonnaise
1/3 cup My Brother's Original Salsa
2 tablespoons prepared mustard
Place potato chunks into medium saucepan and cover with water. Season with salt and boil until potatoes are just tender (don't overcook) Drain in colander. Stir in diced pickles and 1/3 cup My Brother's Salsa Sauce...more if you like it creamier. Taste and adjust seasoning. Garnish with chopped red onions and chives. Cover and keep refrigerated until ready to serve.
My Brother's Salsa Sauce (yields 1-1/3 cup)
Place ingredients in small mixing bowl and cream together. Cover and keep refrigerated until ready to use.
