Sweet & Sour Chicken Bites


Crispy chicken bites with a delicious tropical and tangy sauce that will become a family fave! It can be a meal or served as an appetizer.

1 ½ lbs. Boneless skinless chicken breast

1 teaspoon salt

1  cup My Brother’s Sweet Thai Pineapple Salsa

6 tablespoons soy sauce 

½ cup apple cider vinegar

Corn starch

3 eggs, beaten

Canola or grapeseed oil for frying

Scallions, chopped

Finishing salt

2 cups cooked rice

1)Cut the chicken into bite size pieces(1”) and place in zip top bag.  In small bowl whisk together salt, My Brother’s Salsa, soy sauce, and vinegar.  Pour ½ cup of the mixture in with the chicken to marinate and reserve the remaining 1 ½ cups in separate container for later use. Place the marinating chicken in refrigerator for at least one hour.

2)Put cornstarch in flat dish.  Place beaten eggs in another flat dish. Pour oil in large skillet (about ½ “ deep) and heat over med/high heat.  Working in batches, dredge the chicken into the cornstarch, then dip in egg (usually can do about ¼ of the entire batch at a time) Let brown 2-3 minutes and turn for another 2-3 minutes. If two pieces stick together, separate them with a spatula. Drain on paper towels. Repeat until all the chicken is cooked. Discard any marinade that was used for chicken.

3)Discard any excess oil in skillet and wipe w/ paper towels. Add the cooked chicken and ¼ cup reserved marinade to the skillet over medium heat and cook 1 minute.  Add chopped scallions & finishing salt.  Serve w/ rice. Use remaining marinade as a dipping sauce.
