Grilled Tilapia Tostada

Our griddled talapia comes together where every bite is perfect with the crunch of the tostada shell,snap of the purple onions, zesty radishes, creamy black beans, avocado, goat cheese and amazing tomato tartar sauce. A delicate flaky fish that you will love making the centerpiece of your next Tostada Tuesday (not to be confused with Taco Tuesday)

Serves 4

4 Tilapia Fillets

4 tostada shells

Olive oil

ground cumin to taste

salt/pepper to taste

 2-3 Tbls. Canola or Grape seed oil

1 15 oz. can black beans, rinsed/drained

1 ripe avocado, peeled, petite diced

2 roma tomatoes, seeded, petite diced

4 radishes, petite diced

1 small red onion, thinly sliced

4 oz. goat cheese, crumbled

My Brother’s Farm Stand or Cucumber Tomato Salsa

Mayonnaise

2 fresh limes, quartered

fresh cilantro, finely chopped

To Make Tomato Tartar Sauce:  Equal amounts of My Brother’s Salsa and Mayo gently stirred together. Season with salt. Chill in refrigerator. (3/4 cup mayo and salsa for this recipe)

To Prepare Black Beans: Stir in 1/4 cup of My Brother’s Salsa with the rinsed/drained black beans.  Season with salt. Set aside.

Prep avocado, tomatoes, radishes, red onion.  Set aside.

To prepare tilapia:

Brush tilapia fillets with olive oil and squeeze of fresh lime. Season with cumin, salt, pepper. Heat canola or grape seed oil  on med/high in griddle or heavy skillet.  Sear tilapia fillets for about 4 min (until golden brown) then gently turn to other side and cook another 3-4 min until cooked thru (cooking time depends on thickness of fillet).  Should be opaque and flaky when done.  Place on warm plate.


To assemble tostadas: Layer Tomato Tartar Sauce, prepared black beans,seared tilapia fillet, tomato,avocado, (season tomato/avocado with salt )radish, red onion, squeeze of lime, goat cheese, freshly chopped cilantro.
