Grilled Pork Tender w/Street Corn
Elegant but easy. Flavorful pork slices, tender and juicy drizzled with our smoky, citrusy Street Corn Salsa. Serves with creamy polenta or potatoes and a salad...or layer it on slider buns...any way you serve it - it is delicious!
2 - 2 ½ lbs. pork tenderloin
My Brother’s Street Corn Salsa
1 tablespoon olive oil
salt and pepper
Fresh cilantro
Drain ¼ cup liquid from My Brother’s Street Corn Salsa and place into zip top bag with the pork tenderloin and olive oil. Refrigerate for at least 1 hour to overnight. Refrigerate remaining Street Corn Salsa.
To grill: Remove pork tenderloin from marinade and season with salt/peper. Place on hot grill and cook to desired doneness. (We like medium rare 140*-145*). Remove from grill and cover with foil to let rest for 10 min. Slice and serve with My Brother’s Street Corn Salsa and freshly chopped cilantro.
