Beef & Rice Bowl
Slow cooker easy, this rice bowl runneth over with flavor! My Brother's Salsa adds depth of flavor to an ordinary roast.
3 lb. Chuck Roast
1 cup My Brothers Original, House, Farm Stand or Roasted Tomato Salsa
1 cup beef stock or water
1 small onion, peeled & quartered
salt to taste
1 cup brown rice, cook according to package directions
Toppings: Sour cream or Greek yogurt, black beans, shredded cheddar, scallions or sliced red onion,avocado, diced tomato, My Brother’s Salsa.
Place roast in slow cooker. Add My Brother’s Salsa, beef stock, onion, salt. Cook on low for approx. 6-7 hours. Shred beef with two forks and return to slow cooker and stir in with pan juices.
To serve: Place rice in bowl. Top with shredded beef and spoon on pan juices. Garnish with desired toppings.
