Green Chile Pimento Cheese
(yield 2 ½ cups)
Usually a Southern staple, but we take it to the Southwest and add green chile goodness! You will not be disappointed. Great for parties, snacks, sandwiches, or top your favorite burger!
16 oz. white cheddar cheese, shredded (if you don’t have white cheddar - substitute yellow)
8 oz. jar pimentos, drained & chopped (substitute roasted red pepper)
½ cup mayonnaise
¼ cup My Brother’s Salsa - Hatch or Farm Stand
2-3 Anaheim or Hatch green chiles, roasted, seeded and chopped (if using 4 oz. can try to find roasted variety and drain)Celery ribs, crackers or crostini
Add all ingredients to bowl of stand up mixer. Using paddle, mix on low until well blended. Can be done by hand in large mixing bowl and wooden spoon. Stir until well blended. Serve with celery ribs, crackers or crostini.
