Our hope is that you will make some of our recipes for your family & friends and see just how versatile & flavorful our salsas really are. Bacon Chicken Bites

These smoky, sweet & unusually moist chicken “bites” are wrapped in bacon & glazed using our Fire Roasted Tomato Salsa.

Recipe courtesy of Helen Lampkin/ Serves about 4

  • 2 lb boneless, skinless chicken thighs
  • bacon slices
  • 1 cup My Brother’s Fire Roasted Tomato Salsa (Hot)
  • 1/2 cup honey
  • 2 tbsp Worcestershire sauce
  • toothpicks

In a bowl, combine Fire Roasted Tomato Salsa, honey & worcestershire; cut chicken thighs into bite-sized pieces and wrap each with 1/3 slice of bacon; secure with a toothpick; marinate chicken bites in salsa mixture (in a dish) in the fridge at least 1 hr.

Preheat oven to Broil (500*). On a baking sheet, place chicken bites and drizzle with any remaining sauce; broil about 10 minutes, or until chicken is cooked & bacon is crispy; serve immediately.

Mediterranean Layer Dip

This dip is packed with mediterranean flavors and easy to assemble–simply layer store-bought hummus, our Garden Salsa and chopped vegetables, then sprinkle with feta cheese & toasted pine nuts. It’s a great appetizer and can be served cold or room temp, so it’s perfect for a party!

Recipe courtesy of Helen Lampkin/ Serves 6-8

  • 17 oz container of Hummus (any flavor you like)
  • 3/4 cup My Brother’s Garden Salsa
  • 1 cup chopped English cucumber (skin on)
  • 3 radishes, finely chopped
  • 1/3 cup kalamata olives, roughly chopped
  • 1 avocado, diced
  • 2 oz crumbled feta cheese
  • 3 tbsp pine nuts, toasted

Over medium heat, lightly toast pine nuts in a skillet for 3-4 minutes (stir often so they don’t burn). In a round dish or serving platter, spread hummus (about 1″ thick layer); top with Garden Salsa, then sprinkle with cucumbers, radishes, olives, avocado, feta and finally pine nuts. Cover and chill, or serve immediately with toasted pita bread slices or crackers. Enjoy!
